Triple Mint Blessing

This is a pleasant, refreshing, everyday brew.

I grow three kinds of mint in my garden: Spearmint, chocolate mint and a mild mint that’s locally known as “apple mint.” I harvest and dry enough to fill 2 large jars of each. Then, I put the dry leaves through the blender just to chop them a bit (but not to reduce them to dust!). I blend 4 herbs listed below. Together they make a very good brew that tastes much better than any mint tea I’ve ever purchased. These 4 herbs are easy to grow for the beginning gardener, so be brave and see what happens!

Ingredients: Spearmint, apple mint, chocolate mint, lemon verbena.

Method: Place a heaped teaspoonful of mixture into infuser basket or tea ball; add hot water. Let brew for 4-5 minutes. Remove infuser basket or tea ball. Add a single drop of honey if desired. Stir.
